100% Savagnin, from old vines planted on a terroir of Lias-period marls and iridescent marls, harvested by hand. Vinification is done naturally: direct pressing, transfer into 500-liter oak barrels (without new oak) for fermentation and a maturation of more than three years. The barrels were regularly topped-up. Bottled without fining, filtration or added sulfites.
Jean François Ganevat
Jean-François Ganevat represents the 14th generation of vignerons of his family in Rotalier, in the south of Jura. After years working as the cellar master of Jean-Marc Morey in Chassagne-Montrachet, he took over his family’s estate in 1998.
