Cuvée 50% Melon à Queue Rouge (an old grape variety close to Chardonnay) and 50% Savagnin, from old vines grown organically and planted in 1973 and 1977 in the Vercia lieu-dit, Chalasses and Grands Teppes plots. Manual harvest and natural vinification, after direct pressing, this non-oxidative cuvée (made using ouillage or ‘topping up’ of the barrels) was matured in demi-muid barrels and amphorae for four years, on the lees, in a humid cellar. Unfined, unfiltered, without added sulphur.
