100% Cinsault, at 75% from 68-year-old vines and 25% from 8-year-old vines planted on schist soils in the commune of Cabrerolles in the Faugères appellation. Harvesting is done by hand, with yields of just 18 hl/ha. Natural vinification with zero additives: part of the harvest is de-stemmed by hand, followed by 25 days of maceration, pressing then 6 months of aging in vats. Bottled without fining, filtration or added sulfites.
