100% Cinsault from 66-year-old vines planted on schist soils in the commune of Cabrerolles in the Faugères appellation. Harvesting is done by hand, with yields of just 14 hl/ha. Natural vinification with zero additives: part of the harvest is de-stemmed by hand, followed by 55 days of maceration in ceramic jars with the remaining whole bunches, and one year of maturation in vats. Bottled without fining, filtration or added sulphites.
