100% Cinsault from 8-year-old vines planted on schist soils in the commune of Cabrerolles in the Faugères appellation. Harvesting is done by hand, with yields of 24 hl/ha. Natural vinification with zero additives: part of the harvest is de-stemmed by hand, followed by three weeks of maceration in vats with the remaining whole bunches, and four months of maturation in vats. Bottled without fining, filtration or any added sulfites. Only 150 magnums produced.
