A blend of 45% Carignan, 45% Mourvèdre and 10% Grenache, from old vines cultivated organically and planted on clay soils. Grapes are harvested by hand using small crates. Natural vinification: manual vatting, alternating between destemmed bunches and whole bunches, maceration for 20 days in conical wooden vats, very soft punch-down, light pump-over using a bucket. End of fermentation (long!) in barrels, aging for 10 months in casks. Unfined, unfiltered, zero added sulfites. Aged in bottle for 36 months at the estate before commercialisation.
