A blended cuvée: 60% Sauvignon (29 years old) and 40% Chasan (44 years old), from vines planted on limestone sands in Carcassonne. Yield: 6 hl/ha (!!!). Vinification: non-interventionist, maceration of whole bunches with berries destemmed by hand in a bit of direct press, for 65 days. Pressing then maturation in sandstone jars for 18 months. Neither filtered nor fined, and zero added sulphur
