100% Chenin from young vines, half 26 years old and half 8 years old, planted on poudingues terroirs in the upper Limoux valley, in the commune of Castelreng. Natural winemaking: whole bunches and hand destemming soaked with a little direct press, 40 days of maceration, aged on the lees for 10 months in amphorae. Bottled without fining or filtration, without added sulfites.
