A blend of Aramon, Carignan, Syrah and Cinsault, from two terroirs – schist and limestone – one in Vieussan and the other in Lagrasse. Harvesting is done by hand. Natural vinification: for the Carignan, whole bunches are macerated for two months, while the three other grape varieties macerate for 10 months (!!!) in ceramic jars "en trempette", which is to say in a mix of juice and berries. Then one more year of aging in egg-shaped amphorae. Bottled after blending, without fining, filtration or added sulphites.
