Blended cuvée: 50% Carignan, 30% Grenache and 20% Cinsault, from 40-to-70-year- old vines. Schist soils. Didier’s green capital is entirely managed by his cows, the winegrower’s other great passion... No chemicals have touched his vines in 30 years. Domain certified organic and biodynamic. Grapes are harvested by hand in small crates. Yields around 30 hl/ha. Vinification: old vertical press, maceration for 3 to 4 weeks, maturation 2 years in barrels, with 10% new barrels. Micro-dose of sulphur at bottling.
