A blend of 75% Nielluciu and 25% Muscat d'Alexandrie, from vines planted on ferruginous, clay-limestone soils in the commune of Cessonon-sur-Orb in the Saint-Chinian appellation. Harvesting is done by hand, with yields of just 18 hl/ha. Vinification: depending on the ripeness and health of the harvest, the grapes are pressed, left whole or destemmed by hand, and then fermented all together in vats in a great grape soup and left to macerate for 35 days, followed by 6 month of maturation. Bottled without fining, filtration or added sulphites.
