100% Cinsault from 70-year-old vines planted on schist soils in the commune of Cabrières. Hand-harvested, low yields of 17 hl/ha. Natural viniifcation with three types of maceration: blend of direct press, detemmed berries and whole bunches according to maturity, macerated in sandstone jars for 70 days, then aged in jars for 10 months. Bottled without fining, filtration or addition of sulfites. One year of bottle ageing at the Domaine before commercialisation.
