100% Cabernet Franc (65 years old), grown on iron-rich clay-limestone soils in the commune of Cessenon-sur-Orb, in the Saint-Chinian appellation area. An almost purely symbolic yield: 5 hl/ha! Vinification: a parcel of old vines facing North and very late ripening, 45 days of maceration of the whole clusters in earthenware jars, matured in vats for one year. Neither filtered nor fined, with zero sulphur added. 1500 bottles produced.
