85% Pinot Noir and 15% Gamay, from several parcels between 10 and 40 years old. Soils of sand with flint and Sologne clay. The estate is certified organic by ECOCERT, with natural grass ground cover between the vine rows. Harvesting by hand, careful grape sorting in the vines, well managed yields: 25 hl/ha. Vinification: harvesting of whole bunches, 15-day maceration, low temperature fermentation, indigenous yeasts, no chaptalisation, no sulphur. Matured 6 months in wood vats, bottled with a microdose of sulphur in April 2022.
