"An insane nose"… in Teg’s words! And he’s right: a sublime, very ripe nose with notes of hazelnut, honey, mirabelle plum and iodine… almost like a Jura wine in a blind tasting! The palate follows suit, same richness with a lovely roundness. A great discovery.

Melon de Bourgogne from old vines, aged between 70 and nearly 100 years old, grown organically and planted on the Pont Caffino plot (Canyon refers to the cliff on the site), on granite soils. Hand-picked and naturally vinified: direct pressing, fermentations (malolactic fermentation completed) and one year of aging in barrels on fine lees, with 60% new oak. The day before the 2024 harvest, the barrels were blended in stainless steel vats for a few more months of aging. Bottled in January 2025 without fining or filtration, just a micro-dose of SO2.

Thomas Foubert is the winemaker behind Ferme des Confluences, which he took over with the 2023 vintage in the heart of Muscadet, in Saint-Fiacre-sur-Maine.
