This cuvée reflects the different terroirs of the estate and a challenging vintage, with yields of around 7 hl/ha. The single-vineyard parcels Gras Moutons and Pont Caffino were blended into Reflets. 100% Melon de Bourgogne, from 10- to 40-year-old vines farmed organically on gneiss and granite soils. Hand-harvested. Natural winemaking: direct pressing, malolactic fermentation completed, 9 months of aging on fine lees in stainless steel tanks, fiber tanks and underground tanks. No fining, light earth filtration, just a micro-dose of sulfur.
Thomas Foubert
Thomas Foubert is the winemaker behind Ferme des Confluences, which he took over with the 2023 vintage in the heart of Muscadet, in Saint-Fiacre-sur-Maine. Born to farmers and trained as an agronomist, he has always been passionate about wine. As early as 2006, he was harvesting at La Grange Tiphaine in Touraine.
