A very expressive nose with notes of verbena, candied lemon, and flint... the cuvée’s “Atlantic” character is immediately recognizable, with its lovely iodine notes. The palate is very pure, in harmony with the nose—smooth, taut—with a long finish and a salivating salinity.

100% Melon de Bourgogne from old vines planted on an 80-are plot with very shallow gabbro soils, where the bedrock is exposed. The vines are cultivated organically using biodynamic practices, phytotherapy, and with great attention to the soil’s microbial life. Manual harvest and natural vinification: direct pressing, followed by 31 months of aging on the lees with two stirring of the lees at the start of winter, during the waning moon, on a “flower day.” Unfined and unfiltered, with approximately 40 mg/L of total SO2.
Adèle and Guillaume Lavie
Guillaume Lavie was born in Melun in 1985, and wine wasn’t exactly on his radar at first. Trained as a landscape gardener, he lands in the Ardèche for work and meets Jérôme Jouret, whose sensitive approach to wine opens his eyes. After a stint as a conservation gardener, he heads to Burgundy for the harvest, where he gets to rub shoulders with the Grands Echézeaux. That’s when it clicks: wine...
