100% Melon de Bourgogne from old vines ranging from 40 to 80 years old, cultivated organically using biodynamic practices, and planted across several plots that form the mosaic of terroirs characteristic of Vins de Lavie: gneiss, granite, and gabbro soils. Hand-harvested and naturally vinified: direct pressing, followed by fermentation and aging in underground concrete tanks for 10 months. Bottled at the estate in July 2026 without fining, with light coarse filtration and a micro-dose of sulfur resulting in about 35 mg of total SO2.
