100% Sérine from young vines, farmed organically, planted in 2015 on white clay soils on the Eastern terraces of the Plateau des Garrigues. Hand-harvested into small crates. Natural vinification: total destemming, maceration for a month in concrete tanks, with rackings by gravity, punch-downs during the first 10 days, and gentle pump-overs. Pressing, aged in concrete tanks for one year. Bottled at the estate without fining, light filtration, with just a micro-dose of sulfur (23 mg/l of total SO2).
