Cinsault with a touch of Sérine (less than 10%) from organically farmed vines planted on clay soils. Harvested by hand at full ripeness on the 4th of September. Natural vinification: total destemming, transfer into vats by gravity, maceration of the berries in stainless steel vats for 8 days, without forcing the extraction. Pressing, several months of aging in concrete vats, blending of the two grape varieties at the end of vinification. Bottled on the 8th of December 2025 at Bois d'Arlène without fining or added sulfites, just a light filtration.
