100% Altesse grapes from organically farmed vines planted on a single plot between 350 and 450 meters above sea level, facing South, on clay-limestone soils (roundness), with molassic sandstone (freshness) and very stony glacial moraines (complexity). The grapes were harvested by hand on September 28, 2024, direct pressing, 24 hours of settling, fermentation in enamelled steel vats, aged on lees for 7 months. Bottled at the estate on April 23, 2025 using gravity, with just 1 g/hl of SO2 added during the winter.
