Roussette de Savoie - 2021 - Matthieu Goury and Guillemette Renard
Domaine de Chevillard

100% Altesse from organically farmed vines, exposed to the south/southeast and planted on limestone scree from the Massif des Bauges, set against the hillside. Permanent grass cover, severe manual de-budding, and hand harvesting in 15 kg crates, with yields of 35 hl/ha. Direct pressing of whole clusters, then placed in barrels for fermentation and aging for 3 years, with no bâtonnage. Malolactic fermentation is carried out. Unfined and unfiltered, just 2gr/hl of added SO2 during racking, two months before bottling.
