100% Altesse from young vines planted in 2000 and 2015, organically farmed and facing south/southwest. Geographically, we are in Savoie, but geologically this is the southern edge of the Jura Mountains, with limestone soils containing a significant amount of pebbles. Direct press, settling by gravity. Fermentation and aging on fine lees for 18 months in barrels, without new oak. Unfined and unfiltered, with 2 g/hl of sulfur added during racking two months before bottling. Aged for 18 months in bottles in the estate’s cellars.
