Powerful, complex nose, already very open and evolving glass to glass, with notes of dried apricot, candied citrus, almond, honey, salted butter, and gunflint… The palate is mineral, tender, long, and thoroughly gastronomic.
100% Roussanne from 17-year-old vines managed organically and biodynamically, planted on the parcels of Les Cray and Les Châteaux, with soils of calcareous alluvium and clay-limestone-alluvial respectively. Soil worked only by hand with a pick and using animal traction. Hand-harvested in small crates, direct and slow pressing of whole bunches, juice settled by gravity, élevage in vats. Bottled without fining or filtration, with sensible use of sulfites, total SO2: 42 mg/litre.
