100% Jacquère from biodynamically farmed vines, planted on grey marl soils at the foot of the slopes, beneath the Massif des Bauges. The parcel faces southeast. Permanent grass cover and mechanical soil work, with manual harvesting. Vinification: direct pressing of whole clusters, natural settling by gravity over 24 hours, indigenous yeasts, fermentation and aging in barrels that have seen 4 to 6 wines (so no new oak). Aged on fine lees for two years. Unfined and unfiltered, just 2gr/hl of added SO2 during racking, two months before bottling.
