A real favourite, with a nose of cherry, vanilla and… English candied fruit cake! The oak on the palate is delicate, with very little tannin, while the grape varietal's natural acidity brings beautiful balance and drinkability. The Persan reveals itself here in its finest light.

100% Persan, a grape variety native to Savoie and emblematic of the Chartreuse Valley, which had nearly disappeared due to its fragility. Laurent replanted one hectare on clay-limestone soils; the vines are 6 to 12 years old and are cultivated organically. The grapes were harvested by hand. Vinification: full destemming, 6 days of maceration, end of fermentation and aging for 10 months in 300-liter Burgundy barrels that have seen 3 to 5 wines. Bottled in late July 2025, with total SO2 between 25 and 35 mg per liter.
