100% Mondeuse from organically farmed vines, southeast-facing on steep grey-blue marl soils rich in quartz, beneath the Massif des Bauges. Grass cover, severe de-budding, manual harvesting at full maturity. Fully destemmed, 10-day maceration with gentle extraction, no punch-downs, only light pump-overs. Pressed, 24 months of aging in barrels that have seen several wines. Bottled at the Domaine without fining or filtration, just 2gr/hl added during racking, two months before bottling. Two years of maturation in bottles, in Chevillard's cellars.
