Mondeuse from organically farmed vines, southeast-facing on steep grey-blue marl soils rich in quartz, beneath the Massif des Bauges. Grass cover, severe de-budding, manual harvesting at full maturity. 100% destemmed, 10-day maceration with gentle extraction, no punch-downs, only light pump-overs. Pressed, then transferred into barrels for en of fermentation and aging for 24 months in barrels that have seen 3 to 5 wines. Bottled at the Domaine without fining or filtration, just 2gr/hl added during racking, two months before bottling.
