100% Jacquère from 35-year-old vines in their third year of organic and biodynamic conversion, planted on the parcels of La Plumettaz and Les Cray, with soils of calcareous scree and alluvium respectively. Shallow soil work, manual and with animal traction. Hand-harvested in small crates, direct pressing of whole bunches, juice transferred to vats and gravity-settled, malolactic fermentation completed, élevage in vats. No fining, no filtration, total SO2: 24 mg/litre.
