Blend of approximately 70% Gamay and 30% Mondeuse from vines at least 25 years old, organically and biodynamically farmed, planted on clay-limestone soils of glacial moraine origin with a South-West exposure. The grapes were harvested by hand with careful sorting. Natural vinification: direct pressing of the whole clusters, cold settling without enzymes, short aging in tanks. Bottled at the estate in February 2025 in accordance with lunar cycles. Unfined, lightly filtered, with minimal sulfur use.
