Mondeuse Noire from 4-year-old young vines managed organically and biodynamically, planted on the Détrier parcel with morainic schist soils, here trained on horizontal trellises so the vines grow in a pergola! Hand-harvested in small crates, yields of 18 hl/ha. Natural winemaking: whole bunches gravity-filled into vats for 15 days of maceration, without forcing extraction, slow and gentle pressing, élevage in vats. Bottled without fining or filtration, total SO2: 25 mg/litre.
