A 100% Malbec natural sparkling wine from 20- to 30-year-old vines on several plots, just 4 ares in size, planted at 330 metres altitude on clay-limestone soils facing east. Grapes are picked by hand with small crates, followed by direct pressing for part of the grapes and maceration for the other, all with indigenous yeasts. Bottled just before the sugars are finished to create the natural sparkle in the bottle (otherwise known as méthode ancestrale). Disgorged after 12 months on laths. Neither fined nor filtered, and ZERO added sulphur!
