100% Aleatico (one of the most aromatic grape varieties around!) from old biodynamically farmed vines planted on clay-granite soils, in a warm and windy climate with significant day-to-night temperature variations. The grapes were harvested by hand at the end of September. Vinification: fully destemmed and crushed grapes, with a few punch-downs during maceration, followed by pressing. Fermentation is stopped through fortification to preserve the wine’s natural residual sugars. Aged for 14 months in large oak barrels that have seen several wines.

Yves Canarelli took over his grandfather’s vines in 1993. In 20 years, he has shifted his viticulture over to biodynamics, and reintroduced ancient grape varietals like Cargaghjolu Nero, which nearly went extinct in the 1960s.
