Ablanded cuvée of 70% Macabeu and 30% Grenache Blanc, from old vines pruned with the traditional gobelet method, and planted on a terroir of schist soils at 400 metres altitude, surrounded by garrigue. The estate is certified organic and uses biodynamic farming techniques. Vinification: maceration and fermentation of whole clusters for 15 days, with indigenous yeasts, then matured in demi-muid barrels of 500 liters. Bottled on the estate. Unfined, unfiltered, and zero sulphur added!

Tom Lubbe hails from South Africa. In France, he was one of the finest students of Gérard Gauby , thanks to whom he met Nathalie, Gérard’s sister, with whom he settled in 2001 in Calce, in a still unspoilt environment, where they founded the Domaine Matassa.
