100% Macabeu from organically and biodynamically farmed vines, harvested by hand in 500kg crates. Natural vinification with no additives: direct pressing of the whole bunches, the juice is transferred into 500-liter barrels (without new oak) and concrete tanks for fermentation and aging for over 8 months. Bottled with no fining, no filtration, and zero added sulfur.

Tom Lubbe hails from South Africa. In France, he was one of the finest students of Gérard Gauby , thanks to whom he met Nathalie, Gérard’s sister, with whom he settled in 2001 in Calce, in a still unspoilt environment, where they founded the Domaine Matassa.
