A blend of Gibert and Noual, from young vines about ten years old, grown organically and planted by Fabien Jouves on several plots on the Kimmeridgian limestone plateaus. The grapes were harvested by hand and vinified naturally. A mix of direct pressing and a brief seven-day maceration in concrete tanks. Pressing, blending of the juices, followed by 9 months of aging in stainless steel tanks. Bottled without fining or filtration, and with no added sulfur.
