100% Poulsard from old vines over 50 years old, grown biodynamically and harvested by hand. Rigorous sorting of the grapes in the vineyard and in the cellar. Natural vinification: cold semi-carbonic maceration of the whole bunches, gentle pressing, one year of aging in truncated wooden vats that have seen for several wines. Bottled at the estate without fining or filtration, without the addition of sulfites. One year of bottle aging in the cellars of Domaine Ganevat.

Jean-François Ganevat represents the 14th generation of vignerons of his family in Rotalier, in the south of Jura. After years working as the cellar master of Jean-Marc Morey in Chassagne-Montrachet, he took over his family’s estate in 1998.
