A 100% Poulsard cuvée from biodynamically farmed vines planted on white and gray marl soil in the Côtes du Jura appellation. The grapes were harvested by hand. Natural vinification, cold semi-carbonic maceration of the whole bunches, without forcing the extraction, pressing, 12 months of aging in truncated wooden vats that have seen several wines. Bottled at the estate without fining, filtration or any added sulfites. One year of bottle aging in the Ganevat cellars.

Jean-François Ganevat represents the 14th generation of vignerons of his family in Rotalier, in the south of Jura. After years working as the cellar master of Jean-Marc Morey in Chassagne-Montrachet, he took over his family’s estate in 1998.
