100% Melon de Bourgogne from old organically farmed vines planted between 1967 and 1990 on mica-schist soils. This is a blend of several vineyard parcels. The grapes were harvested by hand. Vinification: half of the grapes were directly pressed, while the other half undergoes three days of whole-cluster maceration. The two juices are blended and aged for six months in fiberglass tanks. Bottled in early March 2026 without fining or filtration, with only a micro-dose of sulfur (2 g/hl).
