Collaboration between Philippe Chevarin and Marie Carroget of La Paonnerie. Half Melon de Bourgogne from Marie, with 25% Grolleau and 25% Gamay Teinturier (planted on mica-schist soils) from Philippe. This is a “blouge” — a blend of white (blanc) and red (rouge). The Melon is directly pressed, 5 days of whole-cluster maceration for the Grolleau and Gamay before pressing and blending. The 3 grape varieties ferment together. Aged for 6 months in fiberglass tanks and bottled in March 2026, without fining or filtration, no added sulfites.
