100% Macabeu from organically grown vines. The grapes were harvested by hand in in small crates, with controlled yields. Natural vinification: direct pressing of the whole clusters for this vintage, short period in stainless steel vats, bottled before the end of fermentation to create effervescence in the bottle. End of fermentation and 6 months of aging on laths. Unfined, unfiltered, zero added sulfites.

Marc Castan lives in Leucate in France’s Aude department. This future enfant terrible was born in Narbonne, where he grew up impassioned by both land and sea.
