A lovely sparkling wine with notes of apricot, green apple, walnut, plus hints of citrus and lemongrass. On the palate, surprisingly round given the aromatics, with a juicy, mouthwatering finish. Absolutely killer—and even more so at this price!

100% Jacquère from 35-year-old vines in their second year of organic conversion, planted on a parcel with sandy silt soils. Harvested by hand, carried in hods. Natural vinification: direct pressing of the whole bunches, gravity-settling, fermentations begun in vats, then bottled with residual sugars (here 12 g/l) to create effervescence in the bottle. Aged on lees in bottle, no fining, no filtration, total SO2: 20 mg/litre. With 11.3 grams of residual sugar per litre, this is a brut sparkling wine.
