From a single parcel, grown on a clay-limestone soil, a blend of 50% Merlot, 50% Cabernet Sauvignon and Franc. The vines are on average 60/70 years old, with some as old as 110! Manual harvests with small crates. Yields: 25 hl/ha. Vinification: cold maceration pre-fermentation for 72 hours, punching down of the cap, maceration 3 weeks in two conical vats of Merrain oak, no chaptalisation, no added yeasts, no sulphur. Maturation 18 months indemi-muidbarrels 1 or 2 wines old, with a homeopathic dose of sulphur at bottling. Average production: between 2500 and 4500 bottles a year!
