Notes of blackcurrant, red plum, soft spices, cocoa. Juicy and velvety on the palate, precise aromatic palette, long finish. The name of the cuvée (Bouffonne is the feminine French for jester), proves that you can have fun in the middle of the Castles, with pleasurable wines!
Blend: 1/3 Syrah planted on shales, 1/3 Merlot on flints, and 1/3 Cabernet Sauvignon on clays, the vines are between 15 and 30 years old and are all biodynamically grown. Separate vinification of each of the grape varieties: five weeks of maceration in concrete vats, aging for 2/3 in amphorae and 1/3 in a barrel that has seen three wines. Bottled without fining or filtration, without adding sulphites.
