100% Chardonnay, a blend from young vines under 30 years old, planted in Avize and Cramant on Grand Cru-classified parcels. Manual harvest, direct pressing, fermentation in stainless steel tanks, then aged in a 35 hl wooden foudre on very fine lees. A blend of the 2018 and 2019 vintages, followed by tirage and aging on laths in the Domaine’s cellars. Dosage at 3 grams per liter, disgorged on the 24th of April 2023.

Vincent Assailly, broad-shouldered and Viking-like in stature, is a vigneron based in Avize, one of the most prestigious villages of the Côte des Blancs. Since 2000, he has been at the helm of Champagne Assailly-Leclaire et Fils, that farms 11 hectares of Chardonnay.
