An intense nose that takes us on a journey—roasted pineapple to quince paste, with notes of praline, honey, and a hint of undergrowth... Deeply concentrated, with ultra-fine bubbles and a velvety, creamy, caressing texture. The finish is incredibly long, on brioche and salted butter.

100% Chardonnay, a pure 2018 vintage cuvée, from vines farmed under biodynamic principles (though not certified). Sourced from three Grand Cru parcels in the village of Avize. Manual harvest and meticulous berry sorting. Vinification: direct pressing, fermentation and ageing in large oak vats and barrels. Bottled for secondary fermentation and aged on lees. Disgorged on December 1st, 2022. Dosage: 2 grams per litre.

Vincent Assailly, broad-shouldered and Viking-like in stature, is a vigneron based in Avize, one of the most prestigious villages of the Côte des Blancs. Since 2000, he has been at the helm of Champagne Assailly-Leclaire et Fils, that farms 11 hectares of Chardonnay.
