An exceptional Champagne with great ageing potential. The nose opens on exotic fruits, butter and vanilla, with a hint of fresh herbs. The palate is broad, dense and silky, with a velvety texture. The finish is incredibly long, chalky and saline.

100% Chardonnay from organically farmed (but uncertified) vines planted in Avize, on the lieu-dit Les Acacias. Soils are mechanically tilled. Manual harvest, direct pressing, spontaneous fermentation with indigenous yeasts. Vinification and ageing in barrels and caks with bâtonnage (stirring of the lees). Only from the 2018 vintage. Bottled for second fermentation and aged on laths for more than three years, disgorged on the 20th of July 2024. Dosage at 2 grams per liter.

Vincent Assailly, broad-shouldered and Viking-like in stature, is a vigneron based in Avize, one of the most prestigious villages of the Côte des Blancs. Since 2000, he has been at the helm of Champagne Assailly-Leclaire et Fils, that farms 11 hectares of Chardonnay.
