A blend of 84% Chardonnay from 70-year-old vines planted in Grand Cru Avize, and 16% Pinot Noir from the terroir of Aÿ-Champagne. The Chardonnay comes from the 2019 and 2020 vintages, while the Pinot Noir is from 2020 only. Hand-harvested, fermented, vinified and aged in oak barrels and large casks. Bottled for second fermentation, then aged on lees in bottle. Dosage: 3 grams per litre.

Vincent Assailly, broad-shouldered and Viking-like in stature, is a vigneron based in Avize, one of the most prestigious villages of the Côte des Blancs. Since 2000, he has been at the helm of Champagne Assailly-Leclaire et Fils, that farms 11 hectares of Chardonnay.
