100% Chardonnay from old vines over 60 years old, planted in Avize on Grand Cru parcels, mainly from the lieu-dit Monts Cheneveaux, with just a touch from Les Maladries. Hand-harvested. Vinification: direct pressing, followed by fermentation and ageing in 300L barrels with bâtonnage. This cuvée comes exclusively from the 2013 vintage. Bottled for second fermentation, then aged on lees for over 8 years. Disgorged on October 16, 2024. Dosage: 3 grams per litre.

Vincent Assailly, broad-shouldered and Viking-like in stature, is a vigneron based in Avize, one of the most prestigious villages of the Côte des Blancs. Since 2000, he has been at the helm of Champagne Assailly-Leclaire et Fils, that farms 11 hectares of Chardonnay.
