A 100% Syrah cuvée made from vines about 20 years old, farmed biodynamically and planted in Fully, at the bottom of the hillside at 500 metres altitude (a vineyard site called La Forêt), and on the hillside at 600 metres (at the vineyard site Les Claives), on granitic, alluvial and gneiss soils. Harvested by hand with small crates. Vinification: the grapes are 100% destemmed, macerated 28 days, with indigenous yeasts, and 12 months maturation in oak barrels. A light filtration at bottling, and a micro dose of sulphur. A RARE cuvée!
