100% Chardonnay from old vines of more than 100 years old, grown organically and planted in Rotalier, on the Les Varrons and Rouchamps plots. Manual harvesting and natural vinification: pressing before fermentation thanks to the indigenous yeasts, and four years of aging on the lees in casks that have seen several wines and in amphorae. Bottled at the Domaine without fining or filtration, no addition of sulphites.

Jean François Ganevat
Jean-François Ganevat represents the 14th generation of vignerons of his family in Rotalier, in the south of Jura. After years working as the cellar master of Jean-Marc Morey in Chassagne-Montrachet, he took over his family’s estate in 1998.
