A nose with rich walnut aromas which don’t overwhelm the other notes, from beeswax to quince and curry... At once peaty and honeyed, fresh and floral, this is very complex. On the palate, we discover a dry, deep, velvety wine, with great sweetness and exceptional length. Bottle of 62 cl.

100% Savagnin from 40- to 80-year-old vines, cultivated biodynamically and planted at the "Au Barbi", "Sauvagny" and "La Vasée" vineyard sites, which have blue marl soils. The vinification is natural: 100% de-stemming, food treading of the grapes, gentle pressing, indigenous yeasts, 48 hours of settling by gravity, transfer into 228-litre barrels after malolactic fermentation for 6 years of maturation sous voile (or under a ‘veil’ of flor). Bottled on the 18th of February 2023, with sulphites used only sparingly.

Marin Fumey, a young purebred Jura winegrower, has always bathed in Vin Jaune! His parents Adeline and Raphaël founded the estate in 1986 with only 56 acres of vines. While it remains a family affair, today Fumey-Chatelain totals sixteen hectares of vines in the process of being converted to organics.
